How Méthode Range came about:
Our love for Cabernet Sauvignon and Riesling led us to create small batch trials that pushed our winemaking out of our comfort zone and moved beyond our preconceived ideas of what these varieties could do.
The idea for our first Méthode wine (Cab Nouveau) was sparked when we wondered what a really young Cabernet Sauvignon would look like in the style of a Beaujolais Nouveau.
This novel fermentation protocol for Cabernet Sauvignon offers a twist on this classic variety, with softness and balance, earthy elements and crisp finish. We made this wine to enjoy young. With the 2021 vintage we trialled a new method to achieve the same style — and it's even better than the 2020, we're so happy! Serve chilled, like you would a Rosé or Riesling, you won't be disappointed.
Méthode Skinny Riesling starts with the traditional crisp, fresh style of Riesling, but explores greater extraction of tannin through skin contact fermentation. This gives the winegreater body, texture and complexity.
Méthode Eucalypt Ed.01 sold out in a matter of a months. It embodies Australian terroir in the true sense of the word. It tests the hypothesis that vineyards amongst gum trees take on some aroma and flavour of eucalyptus trees.
To create this wine, winemakerLuke Tocaciu harvested grapes that were in close proximity to red gums, resulting in balanced minty and eucalyptus aromas.
