Our love for Cabernet Sauvignon and Riesling led us to create small batch trials that pushed our winemaking out of our comfort zone and moved beyond our preconceived ideas of what these varieties could do.

The idea for our first Méthode wine was sparked when we wondered what a really young Cabernet Sauvignon would look like in the style of a Beaujolais Nouveau.

This novel fermentation protocol for Cabernet Sauvignon offers a twist on this classic variety, with softness and balance, earthy elements and crisp finish. We made this wine to enjoy young. 

Following up with a Riesling, Méthode Skinny starts with the traditional crisp, fresh style of Riesling, but explores greater extraction of tannin through skin contact fermentation. 

This gives Méthode Skinny  greater body, texture and complexity.

Finally, Méthode Eucalypt embodies Australian terroir in the true sense of the word. It tests the hypothesis that vineyards amongst gum trees take on some aroma and flavour of eucalyptus trees.

To create this wine, winemaker Luke Tocaciu harvested grapes that were in close proximity to red gums, resulting in balanced minty and eucalyptus aromas.
